Creamy carrot and coriander soup
This carrot and coriander soup by Russell Hobbs is a traditional favourite that is perfect for warming you and the little ones up on cold Wintery days this season!
Ingredients
25g butter
1 small onion, chopped
1 Garlic chove, chopped
400g carrots, sliced
1.5tsp ground coriander
700ml chicken stock
Salt and cracked black pepper
To serve
75ml Greek youghurt or creme fraiche
2 tbsp freshly chopped coriander
To make
In a pot:
Fry the butter, chopped onions, and garlic in a pot. Add your carrots, ground coriander, and a pinch of black pepper and sautee until soft. Add your stock and bring your soup to the boil and let simmer for 15-20 minutes until carrotts are tender. Add a dollop of creme fraiche or Greek youghurt and put soup in a blender or blend with a hand blender. Adjust seasoning as required, add some fresh coriander to garnish your dish and serve with a swirl of creme fraiche or youghurt and some nice crusty bread!
With a Russell Hobbs Soup Maker:
Place the butter, chopped onions and garlic in your Russell Hobbs Soup Maker and select the Steam/boil setting, leave for 60-90 seconds. Add the carrots, ground coriander stock and a good pinch of cracked black pepper. Select the smooth soup programme. When completed add the youghurt and select the manual blend programme for a couple of seconds or until the youghurt is completely blended. Taste and season as needed, and select the sauce programme. To serve add a few flakes of fresh coriander to garnish and a drizzle of creme fraiche.
