RECIPE: Super quick sugar free snacks for kids

Kids are always running around it seems, and all that running around keeps them snacking. While handing them a cereal bar is the easiest option when they need something high energy quick, they can often be chock-full of sugar. We’ve come up with some sugarless options for your kids for the times when they need an energy boost, fast!

Power bites (from the Happy Pear)

Ingredients
300g nuts
100g pitted dates
1 tsp vanilla extract
1 handful goji berries
2 tbsp chia seeds
2 tbsp coconut oil
(can add cacao powder to make like chocolate energy bites)

Method
Blend all the ingredients in a food processor and roll into desired shape and size.
Roll in cacao powder or desiccated coconut to add a little pizazz to your power bite!
Top tip (adults only): If you want your power bite to have a little kick, try adding ¼ tsp instant of espresso powder to your power bites!

No nut energy balls (from Rachel Cooks) 

 

These are great for school as there are no nuts involved!
Ingredients
1 1/2 cups pitted dates
1/2 cup porridge oats
1/2 cup flaked Coconut
1/4 cup unsweetened cocoa powder
1/4 cup flaxseed
2 tablespoons honey
Additional flax meal, coconut or cocoa powder for rolling

Method
Blend all the ingredients in a food processor and roll into desired shape and size.
Roll in cacao powder or desiccated coconut to add a little pizazz to your power bite!

Apple cereal bars 

Ingredients
2 cups rolled oats
1/2 cup shredded, unsweetened coconut
1/2 cup pecans, chopped
1/3 cup dates
1/4 cup coconut oil
1 teaspoon vanilla
1/3 cup honey
1 tablespoon cinnamon
1/2 teaspoon nutmeg
1 cup dried apples, chopped

Method
Preheat the oven to 160 degrees Celsius
Place the oats in a blender or food processor and pulse for 5 to 10 seconds.
On a baking sheet, combine the oats, shredded coconut and pecans and toast in the oven for approximately 10 minutes, stirring after 5 minutes to ensure the mixture does not burn. Once golden in color, remove from the oven.
Place the dates in a food processor and blend until they fully combine and form a paste-like consistency.
In a sauce pan over medium heat, combine the coconut oil, honey, and vanilla. As the liquid heats up, begin to stir the date paste until it becomes well-combined with the mixture.
In a bowl, combine the toasted oat mixture, chopped apples, cinnamon, nutmeg and hot liquid from the stove. Stir until completely mixed.
Firmly press the mixture into a baking tray lined with parchment paper. Cover with plastic wrap and refrigerate for at least two hours or until bars become firm.
Remove from the fridge and cut into 20 bars. Store in an airtight container at room temperature for more crumbly bars, or in the fridge for firmer bars.
