4 unique, healthy recipes for Pancake Tuesday

Any day that allows you to have breakfast for dinner (brinner?) is a great day, all the better when kids get to help out with pancakes on Pancake Tuesday. But sometimes the same old recipes get a bit tired, and we want to make sure our kids are getting some nutrients and vitamins as well as the joy from pancakes this year.

Sweet potato pancakes

Ingredients:

2 sweet potatoes

2 eggs

Pinch cinnamon

Pinch nutmeg

Method: Pierce skin of sweet potatoes and microwave for about five minutes, or until inner flesh is soft. Leave to cool for about ten minutes. Then, remove the skins and mash the potatoes together with the eggs until batter forms.

Fry in a little bit of cooking oil (coconut oil gives a nice accompanying flavour for sweet potato!). Serve with berry compote and greek yoghurt and a smidge of honey!

Two ingredient banana pancakes

Ingredients:

2 bananas

1 egg

Method: Mash all the ingredients together in a bowl and fry a ladle-full on a hot pan. When edges begin to brown, flip and fry on the other side. Serve with honey.

Carrot cake pancakes

Ingredients:

1 grated carrot

1 banana

1/2 cup yoghurt

1 egg

1/4 tsp cinnamon

2 tsp honey

Method: Mash all the ingredients together in a bowl and fry a ladle-full on a hot pan. When edges begin to brown, flip and fry on the other side. Serve with greek yoghurt, honey and berry compote.

Super food oat pancakes

Ingredients

1 banana

1 egg

3 tbsp peanut butter (or any nut butter you prefer)

2 cups of porridge oats

1 tsp baking powder

1 1/4 cups of milk

1 tbsp maple syrup

Method: Place all ingredients together in a blender and mix well to form a smooth batter. Fry a ladle-full on a hot pan. When edges begin to brown, flip and fry on the other side. Serve warm with whatever toppings you like!
